# is this the standard definition?

I would say that q is conjugate to p along a geodesic c if there is a jacobi field along c

which vanishes at p and q, i.e. if the second variation of the energy functional for curves connecting p and q has a kernel. In a manifold on negative curvature there should be no conjugate points but there can be more than one geodesic from p to q.
